What is Cake?

Before explaining the pastry, it is necessary to take a look at the history of the cake! The word cake in the Oxford English Dictionary dates back to the 13th century. Although the word cake was first encountered in the 13th century, the history of cake actually dates back to ancient times. The first cake looked like a honey-sweetened bread, very different from what we eat today. In fact, pastry-making in history started when mankind made the first bread and sweetened it with various ingredients. Even back then, nuts were used to make cakes, and these cakes were usually made to be served in religious ceremonies. used as symbols. So the size and shape of the cake, had ritual significance of equal weight. The shapes used in general varied according to beliefs. Round and circular cakes symbolized the cycle of life or the sun or moon. All cakes and cakes made in this sense were associated with the legends people believed. The cakes that the servants presented to their gods to show their gratitude also had a connection with the annual cycle. For example, the Chinese consider that the moon plays a very important role in the seasonal cycle, so they make a halal moon-like round cake at harvest time to honor the moon goddess 'Heng O' and celebrate it with a festival. Or, during the Maslenitsa festival, which started as a Slavic holiday to pay their respects to the sun god during the reign of Paganism and is still celebrated to herald spring in all of Eastern Europe, including Russia, sun-shaped pancakes (blinis) are made for a week. Of course, it wasn't just the Pagan Slavs who made a round cake to celebrate the spring sun! The ancient Celts also made sun-like cakes during the 'Beltane fire festival', which they celebrated on the first day of spring. In fact, according to their tradition, they would roll the cakes they made down a hill to keep the sun moving. This event was also used as a form of divination: it was believed that if the cake broke when it reached the bottom of the hill, the person who rolled the cake would die that year, and if it didn't, the person would make good fortune that year...

The real big transformation in the history of pastry took place in the 18th century when Vatel invented whipped cream. In the same years, Stanislas Leczinski discovers 'Father Reale', 'Şambaba'. With the famous French confectioner Marie-Antoine Carême, pastry making develops further and by the middle of the 19th century, cake as we know it today takes its place in history.
