History of Cake
1- The history of the cake goes back to ancient times.
The first cakes were very different from what we ate today. Cakes made using yeast were more like bread and sweetened with products such as honey and nuts. According to food historians, the Ancient Egyptians were the first inventors of the cake! However, the first inventors of the cooking method went down in history as the Ancient Greeks! The cake of that time was made by baking the ground, soaked and shaped grains on hot stones.
2- Afterwards, the Egyptians started to bake the cake using the hot chambers, which form the basis of today's ovens, instead of this troublesome technique.
3- The word Plakous, which means “flat”, was used for cake in ancient Greece.
4- The word "cake" that we use today is based on the 13th century in the Oxford English Dictionary.
5- The etymology of the word cake in our language is explained as follows: “Cake in English is a quote from the word "dough cake". This English word is synonymous with the verb *kokjan "to cook", which does not have a Germanic written example. This word has evolved from the form *pekʷ-, which has no written equivalent in the Indo-European mother tongue.”
6- The making of modern cakes took place in Europe in the 17th century. Afterwards, with the development of ovens, molds and refined products, the products added to the cake were diversified and cream cakes, which we call cake today, were made.
7- The place of the cream cake, which we call modern in history, gained importance during the French Revolution. The reason is the revolt of the poor in Paris in 1789, while the French Revolution was taking place in full swing. Because people have no bread to eat. Meanwhile, Queen Marie Antoinette put forward the suggestion that "those who can't find bread should eat cake". With the French revolution, when the pastry makers working only in the royal palace lost their jobs, they opened shops in different regions of France and started to spread the pastry. Thus, modern pastry spread in France. As the leader of this movement, Chef Antonin Careme is known as Urbain Dubols, Swiss French Jules Gouffe, Jullien brothers and Pier Lacam.
8- The history of cake in Turkey dates back to the Ottoman period. At that time, pastry-making was among the professions of Armenian and Greek citizens.
9- The spread of modern pastry was achieved when the people of the Eastern Black Sea Region, who went to Russia to work in the 19th century, specialized in this field and started the pastry profession in our country.
10- The size and shape of the cake varied according to different beliefs.
E.g; While the roundness of the cakes symbolizes the sun and the moon, according to a belief, it was associated with the life cycle due to its circular shape. The ancient Celts also made sun-shaped cakes on the first day of spring to celebrate the arrival of spring. The Chinese also believed that the moon played a crucial role in the seasonal cycle. They would celebrate the harvest by making crescent-shaped cakes to present to the Moon Goddess Heng O. Although the size and shape of the cake varies from culture to culture, their common point is to express their gratitude in a beautiful way! Today, the phrase "let's eat sweet, talk sweet" continues to be used in social events such as cakes, birthdays, weddings and conversations.
